
I chose one of the more festive cookies in the book to make as my third cookie, not because I was feeling particularly festive, but because this cookie has a lot of chocolate in it…and who doesn’t like chocolate?! It was a cookie that didn’t put up too much of a challenge to make and seemed like a manageable lift after the epically challenging three batch S-show I experienced with the Espresso Caramel Blondies.

RESULTS
These cookies came out fudgy, chocolatey, with a pleasing amount of powdered sugar. These were not my favorite cookies as I didn’t like the dense, fudgy mouth feel, but the intense chocolate flavor was good, and I had many people tell me that they really enjoyed the fudge fest. Whatever floats your boat, ya know?!
FOR NEXT TIME
I didn’t have a lot of takeaways for this recipe, being that it was a pretty straightforward cookie and not necessarily my jam. However, a few things to consider for next time.
- This recipe made very large cookies, about 15 cookies with each about 4-5” in diameter, which is completely fine as I like a rather large cookie. However, for next time I would make them slightly smaller so I could increase the cookie quantity and spread that cookie love around to more folks!
- The cookie dough is SUPER thick, like a ball of wet chocolate. And when I say thick, I mean thiiiiiiick…I was worried I had somehow inadvertently added some cornstarch to the dough. Nothing really to be done about this, and the cookies turned out fine, but more of an awareness that you best be prepared for some dense dough.
- I would have liked slightly more powdered sugar to cling to these cookies, although I feel like most of any extra would have ended up in the bottom of the container I was using. There is only so much powdered sugar you can add to a cookie before you’re piling up faux Colombian Bam Bam!
