
There is something special about a sandwich cookie! Like, why don’t all cookies have a creamy stuffing? Furthermore, if all the creamy stuffing tasted like this marshmallow fluff tastes I would solely be eating cream pies! Little Debbie ain’t got nothing on this…except a huge following, slick marketing, and cute little Debbie of course. Ok, ok, ok…but these taste amazing and I would argue that you can pronounce all the ingredients!
These cookies were really fun to make, but also a test of one’s ability to withstand the pain of splattering lava-hot corn syrup. I’m being somewhat dramatic about the creation of the marshmallow fluff, which was the first step in creating these tasty, sweet sandos. Making the fluff is essentially melting sugar into corn syrup until it’s between hot and good god! and then slowly pouring it into your whipped egg whites and cream of tartar until it’s fully incorporated. Then, whip the piss out of it until you get Mount Crumpit! Voila…fluff.

Then you just need to make a flavorful, soft, luscious oatmeal cookie. Once you have that, then it’s time to dollop the fluff on to a cookie and do your best imitation of a car crusher with another cookie. There are two guarantees at this point…First, it will be super satisfying to smush the fluff in between two cookies resulting in a wonderful cookie sandwich. Second, it will be very sticky and may remind you of being a kid in grade school during art day when mom’s newest “gift” stuck to your hand because of your overzealous use of Elmer’s glue. Luckily for you, eating this glue is really good and socially acceptable!

RESULTS
I think it’s obvious at this point that these cookies are phenomenal! If you have not gathered that by now, then, I need to use more adjectives! These sandwiches sent from the cookie gods are soft and flavorful, with the added nutmeg giving them a comforting warm element. And don’t skip the extra step of making the marshmallow fluff in favor of store bought…this fluff is worth it and makes the cookie extra delectable. Plus, you’ll have a story to tell your friends about how you got that lovely pockmark burn on your hand!
FOR NEXT TIME
I wouldn’t change much about this recipe or how I would approach it for next time, other than just making these cookies a lot more often! But a few thoughts…
- After you get the fluff mixture to temp quickly pour it into a glass measuring cup so that it is easier to pour into your mixture as you’re mixing it. Make sure the glass is safe for hot liquids…safety first people!
- I would double the batch of fluff so I had extra for other fluff-eating opportunities, like with graham crackers or just with a spoon. It will keep for a few weeks in an air-tight container, assuming it lasts that long!
- I would add a little more fluff to each sandwich next time. Yes, it’s sticky and would probably make for a messier experience, but if you’re not licking cookie stuffing off your fingers then you’ve been cheated.
- I used a spoon to dollop a large helping of fluff to the middle of each cookie prior to the smushing, which worked fine and resulted in a nice enough look for me. However, I’m all about function over form (don’t hate me), so if you want a cleaner look, you could pipe the fluff onto the cookie which would allow you to place the other cookie on top and minimize the smushing step. Less fun maybe, but probably way prettier. You choose…it’s your cookie!
